Costco Briskets

Costco has entire briskets for sale.

An untrimmed brisket is $2.99 a pound, while a Costco-trimmed brisket is $6.99 a pound.

Spending the 10-15 minutes trimming it myself (with a freshly-sharpened knife), resulted in an 8 pound trimmed brisket (4 pounds of fat cut off).

My roughly 12 pound brisket @ $2.99 a pound was ~$35.

A Costco-trimmed, 8 pound brisket, would cost $55.

Resulting cost of the self-trimmed brisket is $4.50 a pound.
